Our Story

Hi, I'm Luke (American) and I founded Pistache alongside my partner Damien (French). Since we first met, we've bonded over our passion for pastry.

During Covid, we took our skills to the next level, studying for the intensive CAP Pâtissier (French Pastry Exam) to hone our craft.

We founded Pistache Cookie Co in 2023, named after our favorite ingredient, the pistachio (aka "pistache" in French). Pistache operates from a commercial kitchen in SF's Mission District.

Our approach to cookies focuses on complexity, depth, and balance of flavor. We think a cookie can be just as elevated as any pastry you'd find at a fine French patisserie.

We hope our handcrafted cookies spark joy in your life and give you a new perspective on what a cookie can be.

Our Ingredients

We use high-quality ingredients in our dough because you really can taste the difference.

Some of our premium ingredients include organic Guittard chocolate, organic Central Milling flour (the good stuff), European-style butter, Valrhona chocolate, and Nielsen-Massey pure vanilla extract.
